Krystyna Gbiorczyk, in charge of quality and taste control at a distillery in Poznan, western Poland, has for many years used her keen sense of taste and smell to safeguard the reputation of a top-selling brand name.

"The regular tastings allow us to detect any significant differences between different batches of vodka and correct them to the standard we seek," adds Danuta Maranda, a quality control expert.

Malgorzata Novak, samples more than 20 bottles over an eight-hour shift with her first sip of vodka at 6am.

"I check for clarity, consistency and taste, of course. I do similar checks about every hour," she explains.


This is not dissimilar to the process to which I subject my local tavern's vodka selection--taste each one to ensure I am fully aware of any differences in flavor, mouth-feel, and aftertaste. Once I have sampled each brand the establishment has on offer, I choose one and stick with it for the rest of the day, sometimes even continuing to research the differences between labels well past 10 am, sometimes even continuing my research until almost noon.
